The View from the Milk Crate: Leading with Empathy, Strength, and Understanding in High-pressure Kitchens
From a childhood milk crate in her father’s kitchen, Chef Mary Davidson learned to see the rhythm, trust, and controlled chaos of service. What she could not yet see was the cost of carrying pressure in silence. In this candid session, Mary traces her journey from admiring toughness, to surviving a toxic kitchen, to reclaiming the perspective that first made her love hospitality.
This session challenges the belief that strength means never struggling. Through personal storytelling and practical leadership tools, attendees will examine how fear-based cultures erode confidence, connection, and mental health—and how intentional check-ins, trust, and empathy can sustain performance without sacrificing people. Participants will leave prepared to recognize warning signs, lead difficult conversations, and create kitchens where excellence and humanity belong at the same table.
Hospitality will always be fast, demanding, and built around pressure. Destructive culture is not inevitable. The way leaders communicate, respond, and care for people directly shapes whether a team merely survives service or grows stronger through it.
